Coconut Blueberry Cheesecake Bars


1/2 cup butter

3/4 cup graham crackers, crushed

1/2 cup flour

1/2 cup coconut, flaked

1/2 cup pecans, chopped

1/4 cup sugar

12 oz cream cheese, soft

2/3 cup sugar

4 eggs

1 Tbsp brandy or milk

1 tsp vanilla

2 cups blueberries


Preheat oven to 350° F.    Lightly grease 9×13 baking pan.



Over medium heat melt butter until light brown in color, remove from heat.

Stir together graham cracker crumbs, flour, coconut, pecans and ¼ cup sugar.   Stir in butter until combined.   Press into prepared baking pan.  Bake 8 to 10 minutes or until lightly browned.



Beat together cream cheese, 2/3 cup sugar; beat in eggs, brandy (or milk) and vanilla.   Pour over hot crust.   Sprinkle with blueberries.   Bake 18 to 20 minutes or until center appears set.   Cool in pan, cover and chill overnight.   Cut into bars.   Makes 32 bars.
