Cobb Salad

Cobb Salad


1/2 head of Iceberg lettuce

1/2 head romaine lettuce

6 slices bacon, fried and chopped

1 ripe avocado, deseeded, peeled and chopped

2 large eggs, hard-boiled

1 large tomato, chopped

1 chicken breast, halved, cooked and diced

3 chives, chopped or green onions

Dressing of choice


Chop or tare all the lettuce and toss together in a bowl.   Fry bacon, drain on paper towel and chop.   Remove seed, peel and chop ripe avocado.   Hard Boil eggs, cool, peel, and separate yolk from white and chop or chop whole egg, which ever you prefer.   Chop tomato.   Cut chicken breast in half and fry, drain on paper towel then dice.   Chop chives.


Arrange chicken, bacon, avocado, egg whites and yolks, tomato and chives over mixed lettuce on a platter.   Serve dressing of choice on the side or toss into salad.
