Granny’s Zucchini Fritters


1 lb. zucchini, shredded
1 tsp. salt
2 green onions, chopped fine

1 small minced garlic clove, optional
1 large egg, slightly beaten
salt and pepper to taster
1/2 cup all-purpose flour
1/2 tsp. baking powder
2 Tbsps. Oil for frying

Horseradish Sauce, see recipe below


Preheat oven to 200 degrees F.      Set aside a baking sheet to keep fritters warm while others are cooking.


In a large bowl, shred zucchini and toss with salt; set aside for 10 minutes.   Press out moisture from shredded zucchini using cheese cloth or a colander and a wooden spoon.


Place dry zucchini back into your bowl and add green onions, garlic, egg and salt and pepper to taste.   Mix flour and baking powder together then stir into zucchini mixture.   Press into patties and place on wax paper until ready to fry.


In a large heavy skillet heat oil over medium-high heat until shimmering.   Cook Fritter until the edges are golden, about 3 to 4 minutes; turn and fry until browned, about 2 to 3 minutes.   Drain on paper towels for a few minutes then place on baking sheet and put in oven to stay warm and crispy until all are cooked and ready to eat.


Horseradish Sauce


½ cup mayo or sour cream or plain yogurt

1 tsp. prepared horseradish

Splash apple cider vinegar or lemon juice

Salt and pepper to taste


Mix well and top zucchini fritter before serving.   Optional: may add 1/4 cup BBQ sauce for an added zip.


Or make ahead: Keep fried fritters chilled in the fridge for a few days to a week or keep frozen in a well-sealed package for months.   When you’re ready to use them, simply spread them out on a greased tray and reheat in the oven at 325 degrees F. oven until they’re hot and crisp again.


Makes about 10 fritters depending on the size.
