Wheat Free Oatmeal Chocolate Chip Cookies


1/2 cup rice flour

3/4 cup oat flour

1/2 tsp baking soda

1/4 tsp salt

3/4 tsp cinnamon

1/4 tsp allspice

pinch nutmeg

1/2 cup brown sugar

1/4 cup sugar

1 large egg

1/4 cup vegetable oil

1 Tbsp water

3/4 oats, quick

1/4 cup coconut

3/4 cup chocolate chips or raisins


Preheat oven to 350° F.     Line a baking sheet with parchment paper.   Whisk together flour, baking soda, salt, spices and sugars.   Whisk together egg, vegetable oil, water and vanilla.   Pour into flour mixture and stir until not streaks remain.   Stir in oats, coconut and chocolate chips or raisins.   Drop 1 inch balls onto prepared baking sheet; flatten slightly.   Bake 11 to 13 minutes, or until light gold at the edges.   Cool completely on wire rack.   Makes 30 cookies.
