Velvet Cake Sandwich Cookies

 

1 1/3 cups flour

2 Tbsp cocoa powder

1 tsp baking powder

1 tsp soda

1/2 tsp salt

2/3 cup applesauce

1 Tbsp buttermilk

1 cup sugar

1/4 cup butter, soft

1 tsp vanilla

2 large egg whites

Mascarpone Cream Cheese Filling, see below

 

Preheat oven to 375° F.   Line baking sheet with parchment paper.   Whisk together flour, cocoa powder, baking powder, baking soda and salt.   Cream together butter and sugar until fluffy; beat in egg whites; beat in applesauce, buttermilk, and vanilla.   Stir in flour mixture until better is smooth and no streaks of flour remain.   Drop batter 2 Tablespoonfuls at a time onto prepared baking sheet.   Bake 10 minutes, until set but not browned.   Cookies will be cake like.   Allow to cool for a few minutes then remove to wire rack to cool completely.   Makes about 40 cookies.

 

Mascarpone Cream Cheese Filling

 

4 oz mascarpone cheese, room temperature

4 oz cream cheese, room temperature

2 tsp vanilla extract or vanilla paste

1 tsp milk

1 1/2 cups confectioners’ sugar

 

Beat together cheeses until well blended.   Beat in vanilla and milk.   Beat in confectioners’ sugar a few minutes or until very smooth and thick.

 

Makes about 20 sandwich cookies
