
Oatmeal Butterscotch Cookies
3/4 cup butter, soft
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
1 tsp vanilla
1 1/4 cups flour
1 tsp baking soda
1/2 tsp cinnamon
3/4 tsp salt
3 cups rolled oats
1 1/2 cups butterscotch chips
Preheat oven to 375° F. Line a baking sheet with parchment paper.
Cream together butter and sugars; blend in eggs and vanilla until smooth. Sift together flour, soda, cinnamon and salt; stir into butter mixture; stir in oats and butterscotch chips.
Drop by Tablespoon on prepared baking sheet 2 inches apart. Bake 10 minutes or so, until edges begin to brown. Let cool on baking sheet for 5 minutes; transfer to wire rack to cool completely. Makes 4 dozen cookies.
