Gluten Free Pancakes


1 cup brown rice flour

1/2 cup potato starch or tapioca

1/2 cup ground almonds

3 tsps. Sugar

3 tsps. baking powder

1/2 tsp. salt

2 eggs

1 cup coconut milk

2 Tbsps. butter, melted

1 tsp. vanilla extract

1/3 cup miniature semisweet chocolate chips, optional


In a large bowl, mix together rice flour, potato starch, almonds, sugar, baking powder and salt.  In another bowl, whisk together eggs, milk, butter and vanilla; stir into dry ingredients just until moistened. Stir in chocolate chips if using.


Melt a little butter a hot griddle.   Pour 1/4 cup of batter onto a hot griddle; turn when bubbles form on top. Cook until the second side is golden brown. Makes 12 pancakes.
