Chocolate Pound Cake

 

1 cup butter

1/2 cup shortening or coconut oil

3 cups granulated sugar

5 eggs

1 tsp. vanilla extract

3 cups flour

1/2 tsp. baking powder

1/2 tsp. salt

4 to 5 Tbsps. unsweetened cocoa powder

1 cup milk

 

Preheat oven to 325 degrees F.    Grease a 10 inch tube pan or one large loaf pan.

 

Beat together butter and shortening; add sugar and mix well. Add eggs, one at a time, beating well after each addition; mix in vanilla.

 

Mix together flour, baking powder, salt and cocoa powder in a separate bowl then add alternately with milk to creamed mixture.

 

Bake for 80 to 90 minutes, or until chocolate pound cake bounces back when touched lightly in the center with finger.
