Peanut Butter Jammies

 

1/3 cup flour

3/4 cup creamy peanut butter

3/4 cup sugar

1 egg, lightly beaten

6 Tbsp jam, any flavor

 

Grease cookie sheet.   Lightly spoon flour into a dry measuring cup; level with a knife.   Place peanut butter, sugar and egg together; beat until smooth.   Stir in flour until well blended.   Shape into 36 one inch balls.   Transfer to prepared cookie sheet.   Indent center of each cookie with your thumb.   Cover and chill 3 hours.

 

Preheat oven to 375° F.   Bake cookies for 12 minutes or until golden.    Transfer to cooling racks.   Spoon half teaspoon jam into center of each cookie.   Makes 3 dozen.

 

Variations:

May roll in sugar before baking

May dust with powdered sugar
