Granny’s Apple Cake

Granny’s Apple Cake

2 cup flour
2 tsp baking soda
2 cup sugar
1 tsp vanilla
2 eggs
1 cup walnuts
1 batch apple pie filling (see below)
1 cup coconut

For Cake: Mix together the all. Bake in greased and floured 15 1/2 by 10 1/2 by 1 inch baking sheet for 35 min at 350 degrees F.

1/2 cup brown sugar
2 Tbsp cornstarch
1/2 tsp cinnamon
1 1/4 cup water, cold
1 Tbsp lemon juice, fresh
6 cup apples, peeled, sliced
1 Tbsp butter, softened

For Apple Pie Filling: In saucepan, combine brown sugar, cornstarch, cinnamon, lemon juice and water. Stir in sliced apples and cook until hot, about 10 min

1 3/4 cup powdered sugar
1/2 stick oleo or butter
8 oz cream cheese
1 tsp vanilla
1/2 cup chopped nuts, optional

For Icing: Mix together all except nuts, and spread icing on cake while warm. Sprinkle nuts on top or not.
