Granny’s Pecan Pie Cookies

1 single pie crust, unbaked
2 Tbsps. butter, melted
½ cup pecans, chopped
⅓ cup packed brown sugar
¼ cup honey
2 eggs
3 finger pinch of salt

Preheat oven to 400 degrees F.   Butter up a baking sheet.
Over medium low heat melt together butter, pecans, brown sugar, honey, salt and eggs until just thick enough, like pudding consistency.   Remove from heat and set aside.
Using a 3 inch cutter, cut pie crust. Gently fold up on the edges.   Fill with 1 tablespoon of the pecan mixture.
Bake 8 minutes or until filling is just set. Remove from oven and cool on a wire rack.
Variation:

Melt ¼ cup chocolate chips and drizzle over each baked cookie.
