Chocolate Peanut Butter Sandwich Cookies

Chocolate Peanut Butter Sandwich Cookies

 

Cookies:

2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 tsp. baking powder
1 tsp.  salt
1 cup butter, room temperature
1 cup granulated sugar
2 large eggs
1 tsp.  vanilla extract
1/2 cup roasted peanuts, finely chopped

 
Filling:

3/4 cup creamy peanut butter
1/4 cup confectioners’ sugar
4 Tbsps.  butter
1/2 tsp. vanilla extract
1/2 tsp. salt

 

 

Preheat oven to 350 degrees F.       Grease 2 baking sheets.

 

Whisk together flour, cocoa powder, baking powder and salt; set aside.

 

Eat together butter and sugar until light and fluffy; add eggs, one at a time, beating well after each addition.   Mix in vanilla.   Mix in flour mixture until just combined.    Stir in peanuts.  Dough will be a bit sticky.

Drop dough by tablespoons  onto prepared baking sheets about 2 inches apart.  Flatten each cookie slightly with the back of a spoon or the bottom of a glass.    Bake 13 to 15 minutes.     Cool on pans for about 5 minutes; remove to wire racks to cool completely.   Bake next batch.

 

For Filling:   In a medium bowl beat together creamy peanut butter, confectioners’ sugar, butter, vanilla and salt until smooth.    Chill in frig while cookies are baking until firm enough to spread.

 

Turn half of the cookies over and spread one heaping teaspoon of filling on the bottom of each cookie.    Place another cookie on top of the filling so that the bottoms of the cookies are facing each other.    Chill cookies for about 15 minutes or until filling has set.   Yield: 18 sandwich cookies
