Apple Pudding Cake

2 cups sugar

1 stick butter, ½ cup

2 eggs

5 large peeled and chopped apples

2 tsp vanilla

2 cups flour

2 tsp baking soda

1 tsp cinnamon

½ tsp salt

½ tsp nutmeg

Nuts, optional

Beat sugar, butter, eggs and vanilla until creamy.  Dump in chopped apples. DO NOT STIR YET!!! Sift dry ingredients over top of apples.   You can add raisins and nuts, if desired now.   Stir until blended.   This will be very thick.   Bake 350 degrees F.  45 to 50 minutes in an un-greased 9×13 cake pan.

1 cup sugar, white or brown

1 stick butter, ½ cup

1 tsp vanilla

½ cup evaporated milk

In a sauce pan mix together all ingredients.   Bring to a boil and boil for exactly 2 minutes, stirring constantly.   Pour over hot cake.   It helps to pierce the cake with a toothpick first.   Serve warm or cold with whipped cream, or vanilla ice cream or by itself.
