Cheesy Potato and Smoked Sausage Casserole


1 lb. potatoes, peeled, boiled and cubed
1 lb. smoked sausage, skins removed
4 Tbsp. butter
4 Tbsp. flour
2 cups milk
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. paprika
1/2 lb. Velveeta cheese, diced
3/4 cup sharp cheddar cheese, shredded

Preheat oven to 350 degrees F.


Chop smoked sausage into ½ inch pieces.   Cook in a frying pan turning frequently for about 15 minutes, or until slightly browned.     Toss together potatoes and smoked sausage in 2 quart casserole dish; set aside.
Mix together butter, flour, milk, salt, pepper and Velveeta cheese in a saucepan and cook over medium heat, stirring constantly until warm, melted and smooth.
Pour cheese sauce over potatoes and meat. Sprinkle sharp cheddar cheese on top, and then sprinkle paprika evenly over top.   Bake for 35 to 45 minutes or until golden brown.   Remove from oven and let sit for 10 minutes or until set.   Serve and enjoy!
