Coffee Chocolate Chip Cookies

 

1/2 cup butter, room temperature

1 cup powdered sugar

1 cup brown sugar, packed

2 eggs, see substitute below

2 Tbsps. coffee extract

3 cups all-purpose flour

1 tsp. baking soda

1/2 tsp salt

2 Tbsps. milk

1 1/2 cups mini chocolate chips

1 cup chopped nuts, optional

 

Preheat oven to 375 degrees F.

 

Cream together butter and sugars. Beat in eggs, coffee extract; add flour, baking soda and salt, mix well.   Stir in milk well.  Add chocolate chips and nuts if using, mix in well. Drop by spoonful on ungreased baking sheet. Bake 10 to 12 minutes.

 

Variations:

Use 2/3 cups applesauce in place of 2 eggs.

Use coconut oil or shortening in place of butter

Use all-purpose gluten free flour, coconut or almond flour to make gluten free
