Chicken Loaf with Mushroom Gravy

 

2-3 cups cooked chicken, diced

3 eggs, slightly beaten

1 cup milk

1 cup chicken broth

3 cups bread crumbs

1/2 cup onion, chopped

1/2 cup diced tomatoes

1 Tbsp parsley

1 Tbsp celery flakes

1 tsp sage

salt and pepper, to taste

 

Combine these ingredients and mix well. Bake in greased dish 45 minutes at 350 degrees.

 

Mushroom Gravy:

3 Tbsp grease

1/4 cup flour

salt and pepper, to taste

chicken broth

Sautéd mushrooms

 

Melt shortening in pan and blend in flour. Add salt and pepper and brown flour. Stir in enough chicken broth to make medium thick gravy. Add mushrooms. Serve over Chicken loaf.
