Carrot Bread

Carrot Bread


3 cups flour

2 cups brown sugar, packed

1 Tbsp. cinnamon

1 tsp. baking powder

1 tsp. soda

1 tsp. salt

3 eggs

1 cup coconut oil

1 Tbsp. vanilla

2 cups carrots, shredded

1 cup chopped nuts or raisins, optional


Preheat oven to 350 degrees F.    Grease 2 loaf pans.


Beat all ingredients together in a large bowl. Pour into prepared loaf pans and bake for 1 hour or until knife inserted in center comes out clean.   Enjoy!
