Scratch Pancakes

Scratch Pancakes

2 eggs, well beaten
2 Tsp. baking powder
½ cup milk
½ Tsp. salt
2 Tbsp. cooking oil
¾ cup flour
½ Tsp. sugar, optional
bacon fat to grease griddle

Sift together flour, baking powder, salt and sugar in bowl. In another bowl, beat together eggs, milk and oil. Stir egg mixture into flour mixture until all ingredients are well blended. Pour onto greased griddle or frying pan. Cook until pancake bubbles slightly, then turn and cook other side until golden brown.

Top with favorite butter and syrup or jam.
