4 slices bread
2 Tbsp. Thousand Island Dressing
6 slices corn beef
½ cup Sauerkraut
4 Tbsp. butter
4 slices Swiss cheese
Heat griddle to 325 degrees F. Butter one side of each bread slice. Place butter side down onto griddle and place 2 slices Swiss cheese on 2 bread slices on griddle. Top with 3 slices of corn beef and ¼ cup sauerkraut, 1 Tbsp. dressing and other buttered bread slice on each sandwich. Grill on each side until all is melted and heated through.
Variations: roll Rueben up in egg roll and brush outside with olive oil….bake in oven at 325 degrees F. until golden brown on the outside and heated thru. Or deep fried to a crispy golden brown.
