Orange Pecan Sugar Cookies

 

1 medium orange

1 stick butter, room temperature

1 1/2 cups sugar

2 large eggs

1 tsp vanilla

2 1/2 cups flour

3/4 tsp baking soda

1/2 tsp salt

1 cup pecans, finely chopped

3/4 cup dried cranberries

 

Preheat oven to 375° F.    Grease cookies sheet.   Cream together butter and sugar.   Add zest and juice from the orange to butter mixture.   Beat in eggs, one at a time; beat in vanilla.   Whisk together flour, baking soda, salt and add to butter mixture until no streaks of flour remain.   Stir in pecans and cranberries.      Drop dough onto prepared cookie sheet in 1 inch balls about 2 inches apart.   Bake 9 to 12 minutes until edges are lightly browned.   Cool for a few minutes then remove to wire cooling rack.   Makes about 3 dozen cookies

 

Variation: use chocolate chips in place of dried cranberries
