Granny’s Homemade Cake Mix and More

8 cups sifted flour
2 cups shortening
5 cups sugar
4 tsp salt
¼ cup baking powder

In very large bowl, turn half of the flour, add shortening, remaining flour, sugar, baking powder and salt. With a pastry blender cut in shortening until crumbly. Store in airtight container in refrigerator up to 6 months. Makes 15 cups. (if using self-rising flour omit baking powder and salt)

Upside-Down Cocktail Cake

¼ cup butter
½ cup brown sugar
1 can fruit cocktail, well drained
½ cup finely chopped walnuts
2 ½ cup homemade cake mix
1 egg
¾ cup milk
½ tsp vanilla

Melt butter over low heat in round 9 inch pan, remove from heat. Sprinkle with brown sugar, spoon fruit cocktail and nuts evenly over sugar and reserve. Turn cake mix into a small mixing bowl. Add ½ cup milk and stir to blend. Beat 2 minutes at medium speed. Add remaining ¼ cup milk, egg and vanilla and blend well. Beat 2 minutes, turn batter into prepared pan. Bake at 350 degrees F. for 45 to 50 minutes or until pick comes out clean. Cool 5 minutes before turning out of pan.

Raisin Spice Cake

4 cup homemade cake mix
1 tsp cinnamon
½ tsp cloves
2 eggs
¾ cup milk
1 Tbsp light molasses
½ cup raisins

Stir cinnamon and clove into cake mix. Add ½ cup milk, blend well. Beat 2 minutes on medium speed. Add remaining milk, eggs, and molasses. Blend well. Beat 2 minutes. Stir in raisins. Bake in 9 inch greased pan at 350 degrees F. for 35 to 40 minutes or until done. Turn out and cool.

Layer Cake

4 cup homemade cake mix
1 cup milk
2 eggs
1 tsp vanilla

Blend all well and bake in 2 layer greased pans at 350 degrees F. for 25 to 30 minutes.

Variation to any of the above: For chocolate cake add ½ cup bakers cocoa powder
