Cornbread and Muffin Mix

Cornbread and Muffin Mix

4 cups flour
4 cups cornmeal
2 cups nonfat dry milk
3/4 cup sugar
1/4 cup baking powder
1 teaspoon salt

Hand mix together flour, cornmeal, dry milk, sugar, baking powder and salt in large bowl.   Store in airtight container in dark, cool, dry place.   Makes 9 1/2 cups.
For Cornbread:

1 egg

1 cup water

1/4 cup butter, melted

2 1/3 cups Mix


Preheat oven to 425 degrees F.   Grease 8×8 baking dish or cast iron skillet.   In medium size bowl beat together egg and water with fork.   Add Mix and melted butter; stir in gently.    Pour into prepared pan and bake about 20 minutes.

For Muffins:

Prepare batter as for Cornbread and spoon into 12 greased medium muffin cups. Bake 15 to 20 minutes.


Variation: Use Gluten free all-purpose flour to make this gluten free….
