1 Tbsp. flour
½ Tsp. salt
2 Tsp. minced onion
dash of nutmeg
4 slices bacon, cooked and crumbled
2 grated potatoes, cooked
1 cup warm applesauce
Combine eggs, flour, salt, onion, nutmeg, bacon and potatoes.
Pour one forth of mixture into hot greased frying pan, one pancake at a time. Makes 4.
Cook on both sides until golden brown. Spoon warm applesauce over the top of each potato pancake or serve on the side.
