Beef Bourguignon in a Crockpot

 

1 cup burgundy wine
2 Tbsps. olive oil
1 large onion, sliced
1/2 tsp. thyme
2 Tbsps. parsley, chopped
1 bay leaf
1/4 tsp. pepper
2 lbs stewing beef, cut into 1 1/2 inch cubes
3 slices thick cut bacon,  diced
12 small white onions

2 large carrots, sliced or cut

1/2 lb. sliced mushrooms
2 cloves garlic, minced
1 tsp. salt

 

Mix together burgundy, olive oil, sliced onion, thyme, parsley, bay leaf and pepper.   Add beef and marinate overnight (or for at least 4 hours).

 

Next day, drain meat but keep the marinade.

 

Sauté bacon in a skillet, remove bacon to drain on paper towel.   Brown meat in bacon fat.

 

Put beef in the crockpot or slow cooker.   Top with bacon, white onions, carrots, mushrooms, garlic and salt.   Pour marinade over to cover all.   Cook on low 8 to 10 hours.
