Peanut Butter and Jam Bars

½ cup sugar
½ cup brown sugar, packed
½ cup butter
½ cup peanut butter, chunky or smooth
1 egg
1 ¼ cups flour
¾ tsp baking soda
¼ tsp baking powder
½ cup jam
Glaze for topping, optional

Preheat oven to 350 degrees F.

Mix sugars, butters and egg. Stir in flour, baking soda and baking powder. Set aside 1 cup dough. Press remaining dough in ungreased 9×13 baking dish; spread your favorite jam over dough. Crumble last of dough over jam and bake until golden brown, about 20 minutes. Cool and drizzle with Glaze, if using (see below). Cut into bars and serve.


2 Tbsp butter
1 tsp vanilla
1 cup powdered sugar
1 to 2 Tbsp hot water

In saucepan, heat butter until melted. Mix in powdered sugar and vanilla. Beat in hot water 1 tsp at a time until smooth and right consistency.
