Creamy Rice Pudding

Creamy Rice Pudding


2 ½ cups water

Dash salt

½ cup uncooked long grained rice

14 oz. sweetened condensed milk

¼ tsp cinnamon

Dash nutmeg

2 pieces lemon rind ½”

Additional cinnamon


Combine water, rice, cinnamon, lemon rind and salt in saucepan, let stand for 30 minutes.   Bring to a boil, stirring occasionally.   Add sweetened condensed milk, return to a boil, and stir.   Reduce heat and cook uncovered, stirring frequently, 20 to 25 minutes or until liquid is absorbed to top of rice.   Cool, pudding will thicken while it cools.   Remove lemon rind and sprinkle with additional cinnamon.   Serve warm or chilled.   Refrigerate all leftovers.
