Broccoli Ricotta Lasagna

Broccoli Ricotta Lasagna

12 lasagna noodles, cooked and drained
16 oz. ricotta cheese
3 eggs, beaten
1 tsp. basil
2 Tbsp. butter
½ cup onion, chopped
2 cloves garlic, chopped
¼ cup flour
2 cups milk
1 cup mozzarella cheese, grated
1 small tomato, chopped
2 Tbsp. Parmesan cheese

Cook lasagna noodles according to package directions. Set aside. In bowl combine ricotta cheese, eggs and basil. Set aside. Preheat oven to 350 degrees F. In skillet, sauté onion and garlic in butter. Stir in flour. Cook for one minute. Gradually stir in milk. Cook, stirring until thickens and begins to boil. Remove from heat and stir in broccoli and cheese. Place 1/3 of the noodles in baking dish. Top with 1/3 ricotta-egg mixture and 1/3 broccoli-cheese mixture. Repeat layers 2 more times. Top with chopped tomatoes, and Parmesan cheese. Bake for 1 hour or until set. Let stand for 10 minutes before serving.
