A wonderful way to begin your day!

8 tablespoons sweet butter
1/2 cup milk
1/2 cup flour
2 eggs
fresh lemon juice
confectioners’ sugar, for dusting

Preheat oven to 475 degrees F. Mix milk, flour and eggs lightly to make a batter; set aside.

Put butter in heavy frying pan (I use cast iron skillet) or a shallow casserole, place skillet in oven to melt butter.

After butter is melted add batter to skillet; bake 12 minutes; remove from oven.

Place Bismarck on serving plate; pour a little melted butter over Bismark; sprinkle with lemon juice, to taste. Roll Bismark up like a loose jelly roll and sprinkle with confectioners’ sugar.

After you sprinkle with confectioners’ sugar, lightly sprinkle with Grand Marnier.
Or Sprinkle with brown sugar, fruit or maple syrup in place of confectioners’ sugar.
Or Spread with a favorite fruit preserves, fresh berries or chestnut cream; roll up and sprinkle with confectioners’ sugar.
Or arrange fruit on before you bake; then bake; then sprinkle with confectioners’ sugar.
