Hot and Spicy Potato Chicken Casserole

Hot and Spicy Potato Chicken Casserole
2 lbs. red potatoes, cubed
1 lb boneless chicken breasts, diced in one inch pieces
1/3 cup olive oil
2 tsps salt
1 tsp black pepper
1 Tbsp smoky paprika
2 Tbsp garlic powder
2 Tbsp hot pepper sauce
1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded
1/2 lb. bacon

1 cup chives, chopped
Preheat oven to 400 degrees F.     Grease 9×13 baking dish.


Fry bacon and set aside.   Crumble when cooled.
Mix together olive oil, salt, pepper, paprika, garlic powder, and hot sauce in a large bowl.  Add cubed potatoes and diced chicken and toss to coat well.  Place potatoes and chicken into prepared baking dish.
Bake for about an hour, stirring every 20 minutes or so, until cooked through, crispy, and browned.    Remove from oven.


Top with cheeses, bacon and chives.   Return to oven and bake another 5 minutes or until cheese is melted.


Serve with sour cream and guacamole if desired.
