Penuche Candy….aka Brown Sugar Fudge

4 cups brown sugar, packed
1 cup heavy cream
1/4 cup butter, lump about the size of an egg
1 cup chopped walnuts
1 tsp. vanilla flavoring

Bring brown sugar, cream and butter to a boil. Stir constantly (watch carefully) until it forms soft ball stage in cold water. Soft ball is 238 degrees F. with candy thermometer.

Remove from heat and add nuts and vanilla. Stir until it becomes creamy and pour into square pan. Cut into squares.

If you do not have heavy cream melt 1/3 cup butter and pour into 3/4 cup milk…this is equal to 1 cup heavy cream.
