Sweet and Savory Smoked Sausage


1 lb. Kielbasa smoked sausage, sliced
1 medium sweet onion, chopped or sliced
1 green sweet pepper, chopped
1 cup celery, sliced thin
14 oz can diced tomatoes, undrained

1 cup beef broth
20 oz. pineapple chunks, unsweetened
1/4 tsp garlic powder
1/4 tsp pepper
1 Tbsp brown sugar
2 Tbsp flour, all purpose

Cooked Rice, Hot


Drain pineapple, reserve juice.


In heavy skillet cook sausage, onion, green pepper and celery until tender.  Drain pineapple, reserve juice.   Add tomatoes, broth and pineapple; add garlic powder, pepper and brown sugar; cover and simmer 5 minutes.


Blend together flour with pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.

Serves 6
