Cookie Cups

Preheat oven to 375 degrees F. Spray a muffin pan or mini muffin pan with nonstick spray or fill with cupcake paper liners.

Prepare cookie dough, see options below.

Press about 3 Tablespoons of dough to each muffin well. Bake for 10 to 13 minutes or until golden.

Let cool 15 minutes in the pan. While the cookies are warm but firm use the tips of your fingers to gently twist the cookie cups up and out of the pan or if using liners simply lift out. Let cool completely.

Fill with favorite Jelly, pudding, chocolates, mints, candy, icing, spread or fruit with whipped topping….make your own family favorite today…Enjoy!

Peanut Butter Cookies

1 cup butter
1 1/4 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2 1/2 cups flour
Large pinch salt, three fingers
1/2 tsp baking soda

Preheat oven to 375° F. Cream together butter and peanut butter; cream in sugars; beat in eggs. Sift together flour, salt and soda; add to cream mixture. Form dough into small balls; place on baking sheet, flatten with fork. Bake 10 to 15 minutes.

Chocolate Chip Cookies

1 cup brown sugar
1 cup sugar
2 sticks butter, soft
2 tsp vanilla
2 eggs, beaten
3 cups flour, all purpose
1 tsp baking soda
1 tsp salt
1 cup nuts, chopped
2 cups chocolate chips

Preheat oven to 375 degrees F. Cream together butter and sugars; beat in vanilla; beat in eggs; measure then sift flour, soda, salt and beat into creamed mixture. Stir in nuts and chocolate chips. Drop by teaspoon onto baking sheet and bake 8 minutes.

Granny’s Sugar Cookies

3 cups flour
1 1/4 cups sugar
1/4 tsp salt
1 tsp baking powder
1 cup shortening
3 eggs, slightly beaten
1 Tbsp vanilla or almond extract

Preheat oven to 375° F. Sift together flour, sugar, salt and baking powder; cut in shortening with a fork. Add eggs, vanilla and mix well. Press in about 3 Tbsp into each cupcake liner.

Any remainder dough chill for 30 minutes or so. Roll out a portion of dough on floured surface. Cut with floured cookie cutters. Work in left over dough into next portion and repeat. Bake 8 to 10 minutes. Cool and frost and decorate.
