Apple Breakfast Cake

½ cup shortening, butter flavored
1 cup sugar
2 eggs
1 cup apples, pared and diced
2 cups flour
½ tsp salt
1 tsp soda
½ tsp cinnamon
2 Tbsp sour cream
½ tsp vanilla
½ tsp chopped nuts
Brown sugar topping, see below

Cream together shortening, sugar and eggs; add apples. Sift all dry ingredients together; add to creamed mixture; add sour cream and vanilla, beat well. Add nuts. Bake in greased bundt or other cake pan at 350 degrees F. for 30 minutes. When nearly done remove from oven; Sprinkle with brown sugar topping; return to oven for 5 minutes or until brown and bubbly.

Brown Sugar Topping:
¾ cup brown sugar
½ tsp cinnamon
2 Tbsp butter

Mix all together until crumbly. Sprinkle over bread and bake until bubbly.
