Macaroni au Gratin

Macaroni au Gratin

1/3 lb macaroni, 1 1/3 cups uncooked
3 Tbsp butter
3 level Tbsp flour
1 ½ cups milk
Salt and pepper to taste
1/2 plus 1/4 cup grated cheese

Preheat oven to 375 degrees F.

Bring macaroni to rolling full boil in salted water, reduce to simmer; cook about 15 to 30 minutes until tender. Drain; put layer in bottom of deep baking dish.

Blend butter and flour together in sauce pan over medium low heat; slowly add milk, stirring until sauce boils. Cook about three minutes; season with salt and pepper.

Add 1/2 cup cheese to sauce, stir until melted. Pour a layer of sauce over macaroni in baking dish. Add layers macaroni then sauce, till baking dish is full, having sauce for last layer. Sprinkle remaining cheese over top. Bake 35 to 45 minutes or so.
