Great Granny’s Skillet Pudding

1 quart milk
2 eggs, separate yolks and whites
2/3 cup flour
2/3 cup sugar
1 tsp vanilla

Blend flour, sugar, yolks and milk. Shake (like gravy) until blended. Cook until thick. Add vanilla, lightly fold in stiffly beaten egg whites Take off heat and serve.

Seven generations ago, after giving birth to her son, our great Granny was told by the doctor the boy would not live out the week. She fed the baby skillet pudding and her son lived to carry on the family line. Now we serve this as a dessert in honor of our great Granny.
