Granny’s No Bake Chocolate Rum Balls

1 cup chocolate wafers, crushed fine
1 cup confectioners’ sugar
1 1/2 cup pecans, chopped
3 Tbsp light corn syrup
1/4 cup rum or 4 tsp rum flavoring
Sugar, granulated or powdered, or coconut for rolling

Stir together chocolate wafer crumbs, confectioners sugar, and pecans. Add corn syrup and rum. Mix well.

With wet hands, shape into 1 inch balls. Roll in sugar. Store airtight in cool, dry place. Makes 35 cookies

Variation…use vanilla wafers and 1/4 cup bakers cocoa in place of chocolate wafers.

These are best if made about 6 weeks in advance and kept in airtight container.

Note: Oreo Cookies are the best here! Just put some in a gallon size freezer bag…seal bag, start rolling a rolling pin over the bag…and before you know it they are smooth crumbs.
