Granny’s Chocolate Icebox Cake

Granny’s Chocolate Icebox Cake

1 cup water
1 cup sugar
Dash salt
1 oz dark chocolate, see substitute below
6 oz. semi sweet chocolate chips
2 large eggs
1 tsp vanilla extract
Vanilla wafers

In double boiler dissolve water, sugar and salt together; add chocolates and melt together. Remove from heat. Let cool 10 minutes.

Beat eggs in large bowl; pour chocolate mixture in with eggs stirring constantly.

Return chocolate mixture to double boiler; heat, stirring until mixture is consistency of custard; add vanilla.

Line loaf pan or small baking pan 3 inches tall with plastic wrap or wax paper. Layer vanilla wafer on bottom of pan; pour half chocolate mixture over wafers; cover with another layer vanilla wafers; top with remaining chocolate mixture.

Chill 2 to 3 hours and serve with Cool Whip topping.

Dark chocolate substitute: Melt 1 Tbsp. butter or shortening; stir in 3 Tbsp. unsweetened cocoa powder until dissolves.

Variations: use dark chocolate cookies, peanut butter cookies, graham crackers or chocolate graham crackers in place of vanilla wafers….

Also try adding a layer of fresh fruit over cookies….

Also try topping with cherries….
