Cocoa Cinnamon Cutouts

2 cups flour, all purpose or coconut flour
½ cup sugar, granulated
2 Tbsp. unsweetened cocoa powder
1 Tbsp. ground cinnamon
1 cup butter, 2 sticks at room temperature
Yolk from 1 large egg, lightly beaten

Mix together flour, sugar, cocoa and cinnamon. Cut in butter with pastry blender until crumbly. Stir in egg yolk until blended.

Press dough together, divide in half; wrap each half and chill 30 minutes or so, until dough is firm enough to handle.

Preheat oven to 350 degrees F. Grease baking sheet.

Removed half of dough from frig and roll out on lightly floured board to about 1/8 inch thick, leaving remainder of dough to chill until ready to roll out. Cut dough into shapes, place on prepared baking sheet about ½ inch apart.

Bake 12 minutes until firm. Remove from oven, place on wire rack to cool. Frost cookies as desired or dust with powdered sugar. Enjoy!

Makes about 40 cookies…

Great for making chocolate cinnamon sandwich cookies!
