Scalloped Tuna and Potatoes

Scalloped Tuna and Potatoes

3 Tbsp. butter
3 Tbsp. minced onion
½ tsp. salt
dash of pepper
3 Tbsp. flour
2 cups milk
1 can tuna, drained and flaked
3 large potatoes, thinly sliced
½ cup cheddar cheese, shredded

Preheat oven to 350 degrees F. Sauté onion in butter until tender. Stir in salt, pepper and flour; whisk in milk to make sauce. Continue cooking, stirring constantly until thickened. Add tuna and ¼ cup cheese. Heat through.

Layer potato slices in 8×8 baking dish. Pour tuna mixture over potatoes.

Bake covered for 1 hour; then remove cover and bake for 30 minutes more. Top with remaining cheese and bake until melted, 5 to 10 minutes, watch closely so it does not burn. Serve immediately.

Use ham in place of tuna.
Add fresh peas to the sauce
