Tea Party Tarts

 

Tarts:

1 cup all-purpose flour, may use gluten free

¼ tsp. salt

8 oz. cream cheese, divided

2/3 cup butter

 

Preheat oven to 375 degrees F.

 

Mix together flour and salt; cut in 4 oz. cream cheese and butter until crumbly.   Divide dough into twelve portions, roll each into a ball.   Roll out each ball on a lightly floured surface to about 4 ½ inch circle.   Place in 3 inch tart pans; prick bottom with fork.    Bake 15 to 20 minutes or until golden brown.   Let cool.

 

Filling:

½ cup sugar

2 Tbsp. cornstarch

Salt, just a dash

1 cup milk

½ tsp. vanilla

Strawberries cut in half

Banana slices

 

Mix together sugar, cornstarch and salt in a saucepan.   Gradually add milk, constantly stirring.   Cook  over medium low heat until mixture is clear and thickened, stirring constantly.   Reduce heat to low; add vanilla.   Cube remaining cream cheese and add to mixture; stir until smooth.   Fill tarts; chill to set.   Top with fruit then serve.   Makes 12 tarts

 

Variation: use whatever fruit and berry for topping…the sky is the limit here.    Make your own family favorite today.   Have fun now!
