Granny’s Lemon Batter Fish

Dip in:
1/3 cup lemon juice
1/2 cup flour, all purpose or Gluten free all purpose

Pour Lemon Juice into shallow bowl. In separate shallow bowl place flour. Dip fillets in lemon juice; then flour; then finish with a coat of batter.

Batter:
1 cup flour, all purpose or Gluten free all purpose
1 tsp baking powder
1 tsp salt
1/2 tsp sugar
1/2 tsp thyme
1/4 tsp pepper
1 egg
2/3 cup water
1/3 cup lemon juice

2 pounds cod fillets
Oil for frying

For Batter: In shallow bowl, combine flour, baking powder, salt, thyme, sugar and pepper; set aside. Beat egg and combine with water and lemon juice; stir into dry flour mixture until smooth.

In a large skillet, over medium-high heat, heat one inch of oil. Fry fish, few fillets at a time, for 2 to 3 minutes on each side or until golden brown. Drain on paper towels. Serve with tarter sauce or your favorite dipping sauce. Serves 5
