Applesauce Pancakes with Apple Cider Syrup, Gluten Free

1 1/2 cup rice flour
3 Tbsp cornstarch
2 Tbsp potato starch flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup milk
2 eggs
3 Tbsp butter, melted
1 cup applesauce
1 tsp lemon juice (optional)
Apple Cider Syrup, topping (see below)

Mix together flours, starches, baking powder and salt. In a separate bowl, mix milk, eggs, butter, applesauce and lemon juice; add to dry ingredients. Stir to remove the lumps and cook on a griddle as usual.

Apple Cider Syrup

1 cup brown sugar
2 cups apple cider
1 or 2 cinnamon sticks

Make the syrup. Over medium heat in a medium saucepan, combine the cider and brown sugar, then add the cinnamon stick. Bring to a boil, then reduce heat to medium low and continue simmering, stirring occasionally, for about 30 minutes until the mixture is reduced by about 2/3. Remove from heat and let cool (it will thicken as it cools).
