Cranberry Bars

Cranberry Bars

1 1/2 cup flour
1 1/2 cup minute oats
3/4 cup brown sugar
1/4 tsp baking soda
1 Tbsp lemon or orange peel, finely chopped
3/4 cup butter, melted
16 oz whole cranberry sauce
1/4 cup nuts, chopped

Preheat oven to 350° F Stir together flour, oats, brown sugar, lemon peel, baking soda; stir in butter and mix thoroughly. Reserve 1 cup of mixture for topping. Press the main portion into a 7×12 inch baking pan. Bake for 20 minutes.

Carefully spread cranberry sauce on top of a baked crust. Stir nuts into reserved oat mixture. Sprinkle on top of cranberry sauce. Bake 25 to 30 minutes more or until top is golden. Cool in pan on wire rack. Cut into 24 bars.
