November 18, 2016

No Knead Dinner Rolls
2 packages active dry yeast,  1/2 ounce
1/2 cup warm water, 110 to 115 degrees F.
1 Tbsp. plus 1/3 cup sugar, divided
1 cup warm milk, 110 to 115 degrees F.
1/3 cup shortening
2 eggs
1  1/2 tsp. salt
4 to 5 cups all-purpose flour

In a large bowl, dissolve yeast in warm water.    Stir in 1 Tbsp. sugar; let stand 5 minutes.    Add warm milk, shortening and eggs.   Stir together salt, 3 cups flour and 1/3 cup sugar; add to yeast mixture.   Beat well for 2 minutes.    Stir in enough remaining flour to form a soft sticky dough.  Do not knead.   Cover and chill in frig overnight.

Next day punch dough down.    Turn onto a lightly floured surface; divide into 24 portions.  Divide each portion into three pieces; shape each piece into a ball.

Grease 24 muffin cups.  Place three balls in each prepared muffin cup.   Cover and let rise in a warm place until double in size, about 1 to 2 hours.
Preheat oven to 350 degrees F.   Bake 13 to 15 minutes or until golden brown.    Remove from oven.   Serve warm.
