Hot and Spicy Chicken Meatballs

1 lb. lean ground chicken
1 egg
1/2 cup breadcrumbs
1 carrot
1 stalk celery
2 green onions
1/2 tsp. garlic powder
1/4 tsp. salt
1 oz. crumbled blue cheese
1/2 cup Hot Sauce, divided
1 Tbsp. butter, melted

Preheat the oven to 350 degrees F. Grease a baking sheet.

In a large bowl mix together chicken, egg and breadcrumbs. Chop carrot, celery and green onions then pulse into small bits in a food processor; add to chicken mixture. Gently mix in garlic powder, salt, blue cheese and ¼ cup hot sauce. Form into one inch size meatballs, about 28 or so. Place meatballs on prepared baking sheet.

Bake 20 minutes. Remove from oven; let cool a few minutes then put on serving dish.

Mix together remaining hot sauce and melted butter and drizzle over meatballs. Enjoy!

Variation: in place of Hot sauce use BBQ sauce.
