Poor Man’s Pie AKA Vinegar Pie

1 unbaked pie shell
1 cup brown sugar
1/3 cup flour
1/4 tsp salt
1 1/2 cups cream or half and half
3 Tbsp apple cider vinegar
3 Tbsp butter, room temperature

Preheat oven 400 degrees F. Place pie crust into pie plate, prick with fork; bake 10 minutes. Remove from oven. Set aside.

Reduce heat to 350 degrees F.

In heavy small sauce pan, heat cream to warm. Remove from heat.

Mix together brown sugar, flour and salt. Mix into warm cream; mix in vinegar. Pour on top of pie crust. Dot with bits of butter.

Bake 50 to 60 minutes or so, until golden spots form on the top. Remove from oven, filling will firm up as it cools. Cool completely. Serve.

Variations:
add 1 tsp cinnamon
add 1 tsp vanilla extract
