Coconut Thumbprints

Coconut Thumbprints


2 1/2 cups flour

3/4 cup coconut, shredded

1/2 tsp baking soda

1/2 tsp salt

2 sticks butter, soft

1 1/4 cups sugar

1 egg yolk

1 tsp vanilla

Your favorite Jam or chocolate spread


Cream together butter and sugar until light and fluffy; beat in egg yolk and vanilla.   Whisk together flour, coconut, baking soda; beat into cream mixture.   Cover and chill for 30 minutes.


Preheat oven to 350 degrees F.    Position racks in upper and lower thirds of oven.


Roll into 1 inch balls and bake 14 minutes   Dent in the Cookies; fill with jam and bake for 10 minutes.   Let cool on baking sheets a few minutes; transfer to racks to cool completely.   Variation:  for Chocolate spread apply after all baking is done.
