Granny’s Green Bean Casserole


4 cups cooked French-cut green beans, or 3 cans (15 oz), drained

3 Tbsp butter

8 oz. sliced mushrooms

1/2 cup sweet onion, chopped

2 Tbsp flour

1 tsp salt

1/4 tsp ground black pepper

1 1/2 cups milk

2 cups shredded Cheddar cheese

1/4 cup sour cream

1 cup soft bread crumbs

1 Tbsp melted butter

Parmesan cheese, optional


Heat oven to 350° F. Grease a 2 quart baking dish.  In a large saucepan, melt butter over medium-low heat. Add mushrooms and onion; sauté, stirring, until mushrooms are browned and onions are tender. Stir in flour, salt, and pepper until all is blended into the fat. Gradually stir in the milk. Continue cooking, stirring, until slightly thickened. Stir in cheese, sour cream, and drained green beans. Spoon into the prepared baking dish. If desired, sprinkle with a few tablespoons of shredded Parmesan cheese. Combine bread crumbs and melted butter. Sprinkle over the casserole.   Bake 25 to 30 minutes until all is bubbly and browned.   Serves 8




2 cans French-style green bean, drained

1 cup sour cream

1 can French fried onion rings

1 can cream of mushroom soup

Salt and pepper to taste


Preheat oven to 325 degrees F.   Stir beans, sour cream, soup and salt and pepper together.   Top with onion rings and bake for 20 minutes or until bubbly hot.
