Granny’s Sweet Potato Marshmallow Cobbler

4 large baked sweet potatoes or 48 ounces canned yams
1/2 cup butter, room temperature
1/2 cup brown sugar, packed
2 large eggs
1/4 cup cream or half and half or canned evaporated milk
1 tsp ground cinnamon
1 tsp ground ginger
Nutmeg, just a dash
1 tsp pure vanilla extract
3 to 4 cups mini marshmallows, or large marshmallows will do

Preheat oven 375 degrees F. Butter a 2 quart baking dish.

Mash sweet potatoes; add butter, brown sugar, cream, cinnamon, ginger, nutmeg and vanilla; blend together well. Whip eggs lightly; blend into sweet potato mixture.

Pour into prepared baking dish. Cover with foil lightly. Bake 20 to 30 minutes or so, until heated through.

Remove from oven, uncover, stir gently together. Carefully spread marshmallows on top. Return to oven; bake uncovered about 15 to 20 minutes or so, until marshmallows are nicely browned.
