Crispy Almond Chocolate Chip Cookies, gluten free

 

Sift together and set aside:

2 ¼ cup rice or coconut flour

1 tsp. baking soda

1 tsp. salt

 

Cream together:

1 cup almond butter, soft

¾ cup sugar

2 tsp. vanilla

¾ cup brown sugar, packed

 

Beat in:

2 eggs

 

Add to flour mixture and mix well.

 

Stir in:

2 cups chocolate chips

1 cup coarsely chopped nuts, optional

 

Preheat oven to 375 degrees F.

 

Drop onto cookie sheet and bake for 10 to 12 minutes.   Makes about 100 small cookies.
